Want more energy? Consider eating salad greens with the simplest of adornments. A simple olive oil, lemon, salt and pepper dressing is so refreshing. You can use coconut aminos, organic soy sauce, minced shallots, good mustard, ketchup and garlic for a great dressing that hits all of the flavor notes. Salads are cooling to your body. I generally eat them in the spring and summer. Steamed, boiled or sautéed greens like collards and kale, I eat throughout the year. With those kind of greens, rice vinegar, mirin and soy sauce is delicious. You can sauté hearty greens with onions and garlic or add them to soups. Greens deliver chlorophyll into your bloodstream.
